The Lazy Vegetarian

Hi, I'm Courtney :)

As a proofreader here at Swanson Health Products, I'm learning about a lot of products that I never would have known about otherwise, and I'm enjoying seeing the vast array of alternative health and natural beauty items that are out there in the marketplace.

Of particular interest to me are compassionate products: those made completely without animal ingredients or animal testing. I'm also expanding the scope of my vegetarian menu choices: we’ve got a lot of food items that I wasn’t familiar with before. Now I’m learning what their benefits are and what I can make with them … or rather, what I can have someone make for me, since I hate to cook.

Outside of work, I enjoy spending time with my fiancé (and aforementioned personal chef), gardening, biking, and watching generous amounts of sports.

Gnocchi with Greens and White Beans: A Colorful, Hearty, Healthful Recipe

Sunday, February 5, 2012 by Courtney K
Colorful!Recipe email time again! This time we have a hearty and healthful Skillet Gnocchi with Chard and White Beans. The store I went to didn't have chard or spinach—puzzling, but I chalked it up to being January in North Dakota—so I used kale instead. **Bonus points for the kale chips I get to make from the leftovers.** As much as I love kale, I have to admit chard has a very impressive resume: packed with vitamins and minerals, it also contains at least 13 different polyphenol antioxidants. Plus, if...Read More »

A Blogger's Recipe and a DIY Project

Wednesday, December 28, 2011 by Courtney K

Is there a food you absolutely hated as a kid? Most children are picky eaters, but we generally grow out of it as we get older and more adventurous … or just exposed to different (better) preparations. When I was little, I would rather sit at the table until bedtime than have anything to do with things like beans, cooked peas, squash or carrots. Most of that I’ve gotten over.

That being said, I was excited about the dish I was assigned for a recent Swanson recipe email: Pumpkin Chickpea Curry....

How 5-HTP Helps Me Deal With Stress (and Poor Sleep)

Tuesday, October 12, 2010 by Courtney K

In a recent recipe sent out by the cooks here at Swanson Health Products, we called out tryptophan as an important nutrient provided by the chicken in the dish. When I think of chicken, the first thing I think of is protein, not tryptophan. And when I think of tryptophan, I think of it in terms of the post-Thanksgiving Dinner nap, not something I need to supplement.

Recently, however, with the wedding coming up and being super busy here at work, I was looking for something to help deal...

What's In Animal Feed? (You're Eating It Too!) A Look at Factory Farm Animal Feed

Thursday, September 30, 2010 by Courtney K

Americans are giving more thought these days to what they’re eating. For those who consume animal products, though, there is a growing awareness of—and concern over—what their food has been eating.

The Union of Concerned Scientists discussed industrial animal feed on their website, and what they have to say could surprise you … and possibly make you reconsider your grocery list.

Common ingredients in factory farm animal feed can include:

  • Same species meat
  • Diseased animals
  • Feathers, hair, skin,...

Sweet Potato & Black Bean Burrito: A Healthy, Hearty Meal

Wednesday, September 15, 2010 by Courtney K
We're pretty keen on black beans here at Swanson. They show up in expert queries (Are Black Beans a Superfood?), recipes (Black Bean Burgers), and the Swanson Health blog (Ben's 5-Part Exposé). Considering they're rich in fiber, have a low glycemic index, and are packed with antioxidants, minerals, protein and iron, it's no surprise we love this nutritious, natural organic food.

Early last month, I wrote about an article in Bicycling magazine that discussed nutrition for cyclists. The article...Read More »
